Okay! I really wanted some photography ready for today, or maybe an essay about my deeply ambivalent relationship with the pacifier, but I haven't installed Photoshop on my laptop and I've had no time to write. So, instead, I have CHEESE. Everyone wins.
This is a quick, easy appetizer that uses mostly pantry staples and goes together in about five minutes. It's a great combination of cheesy richness, garlic bite, and bright, lemony finish.
16 oz. bleu cheese (or Gorgonzola or feta, crumbled)
1 small red onion, minced
3 tablespoons parsley, finely chopped
¼ cup extra virgin olive oil
Juice of one lemon
2 cloves garlic, minced
Spread the cheese in a layer over the bottom of a small serving platter or plate, about ½ inch deep. Sprinkle the onion and parsley evenly over cheese.
In a small bowl or Pyrex, whisk together olive oil, lemon juice, and garlic. Pour dressing over cheese mixture. Grind lots of black pepper over the top and voila!
Serve with crackers and wine. Make sure that everyone at your party eats a little so that no one has to feel bad about their garlic breath. Enjoy!
